Baked Apple granola
A baked apple adds a comforting note to a bowl of granola, reminiscent of a crumble. You could use them warm, if you get up early enough to bake, but they are equally good used cold. They keep well in the fridge for a few days, making it a simple, bleary-eyed construction job while the kettle boils.
Ingredients
- 6 Apples
- 300g yoghurt
- 250g granola
- 125g blueberries
- sugar to taste, optional

Step 1
Preheat your oven to 180°C/Gas 4. Core the apples and sit them in a snug-fitting oven dish. Add a dash of water and cover them with baking parchment or foil. Bake for 30 minutes or so until completely soft but still just holding their shape.

Meanwhile, pop the blueberries into a small pan and heat them gently until they start to soften and burst, creating a jammy compote. Add a pinch or two of sugar to sweeten further, if you like. Leave to cool.

To serve, pop an apple in a bowl and roughly split it open. Spoon over some granola followed by a generous blob of yoghurt and a swirl of blueberry compote.
