Balsamic strawberries & ricotta toast
If you've not tried strawberries with balsamic, you need to! I've paired them with creamy ricotta and fresh mint on sourdough toast for a quick, light sweet and savoury brunch or snack.
The flavour combo also works well in salads with feta or mozzarella.
Cook's notes
If you don't have mint, basil also works well.
Ingredients
- 2 slices of sourdough, toasted
- 100g ricotta
- 3-4 strawberries, sliced
- balsamic glaze dressing (or just balsamic vinegar)
- fresh mint leaves, finely chopped
- salt and pepper

Step 1
Spread the ricotta on the toast, then add the strawberry slices.

Drizzle with the balsamic dressing, sprinkle over the mint and finish with salt and pepper.
