Basic pizza dough
A quick basic dough for homemade pizzas. It is robust enough to use in a domestic or pizza oven and can be rolled nice and thin.
Cook's notes
If you are struggling to find somewhere warm for your dough to rise, pop the covered bowl in the oven (don’t turn it on!) alongside a jug full of freshly boiled water. It creates a warm humid environment perfect for proving.
Ingredients
- 1 tsp dried yeast
- 1 tsp sugar
- 320ml lukewarm water
- 500g strong white bread flour
- 1 ½ tsp fine sea salt
- 2 tbsp olive oil

Step 1
Whisk the yeast and sugar into the water and let it sit somewhere warm for 10-15 mins, until the yeast appears to be active and starts to bubble and foam slightly.

Place the flour and salt in a bowl and then add the liquid and oil. Bring it together and knead into a ball before turning it out onto a floured surface and kneading firmly for 5 minutes, until smooth and elastic. If it feels too wet, add a little more flour as you knead. If it feels too dry, wet your hands and work some more water in as you knead.

Shape it into a tight ball and pop it back in the bowl. Cover and leave it somewhere warm to double in size.

When it is ready, knock it back and divide and shape into 4-6 equal-sized balls, depending on the size you need. Leave to rest for 10-15 mins before rolling out as needed. You can keep them at room temperature for an hour or keep them in the fridge to stop them rising again too much.
