BBQ grilled romesco
This is a smoky BBQ twist on the classic romesco sauce, perfect to pour over other grilled veg, or enjoyed as a tasty side or dip.
Cook's notes
Try serving with grilled onions.
Ingredients
- 5 red peppers
- 1 red chilli
- 1 tablespoon paprika
- 100g sun dried tomatoes
- 100ml good quality olive oil
- 150g whole almonds
- Juice and zest of one lemon
- Salt and pepper to taste

Step 1
Start by toast your almonds in a medium oven until a light golden brown

Grill the red peppers over fire, until lightly charred and beginning to blister. Allow them to cool, and then peel and deseed.

Blend all the ingredients together in a food processor until a coarse paste is formed.
