One of the thinnest beef steak cuts, these tender escalopes pan-fry in minutes. They make a lovely meal with a crisp green salad. Escalopes are also the best cut for stuffing and rolling into beef olives. All our beef is organic, grass-fed and prepared by our team in the Riverford butchery.

How to prepare

Lean and very fast to cook. Season well and fry in a very hot, oiled pan for 1-2 mins a side, until cooked through. Alternatively, tap out into 3mm thick 'schnitzels', dredge in flour, egg and breadcrumbs (try mixing in some Parmesan) and shallow fry in oil or butter, until golden on both sides and completely cooked.

Storage

Keep refrigerated below 5°C. Once opened, use immediately for best quality. If not required immediately freeze as soon as possible and always within the use by date. Once frozen use within 1 month. Defrost in a fridge and use same day. Do not refreeze.
