About
Far from being a simple novelty, purple carrots are jam-packed with goodness. Their vivid colour comes from anthocyanins: the same pigment that makes blueberries a superfood. Purple carrots are rich in this heart-healing anti-oxidant, as well as the vitamin A and beta-carotene that is found in standard orange varieties. Their excellent flavour is the cream cheese icing on the cake.

As children often say, why cook them at all? Really good carrots are best used raw in salads
How to prepare
Boil or steam in 5-10 mins. They are happy roasted, braised, steamed, stir-fried or boiled; just don’t overcook them into mushy submission. The vibrant purple will dull but not disappear when cooked. To take full advantage of their colouring, try using them raw in salads or as a quick crudité snack.
Storage
Carrots keep for several weeks in a paper bag on a cool veg rack.
