Cheese, carrot and mango chutney sandwich
This is one of the simplest and easiest ways to use up a single, lonely carrot. Grate it and mix with mango chutney and add to a cheese sandwich for one of the best sweet, salty combos.
Ingredients
- 1 carrot, peeled and grated
- 2 tbsp mango chutney
- cheddar cheese, or cheese of choice, sliced
- butter or mayonnaise
- 2 slices of bread

Step 1
Place the grated carrot in a small bowl and spoon in the mango chutney. Mix well.

Step 2
Butter your bread and top a piece with a few slices of cheese. Spoon over the carrot mixture and pop the other slice on top.
