Joseph and Marcela supply us with tender lamb’s lettuce (a local speciality), and sometimes other treats across the year. The farm has a unique soil, influenced by the region’s Breton marshes and coastal climate. They are certified organic, working with nature and protecting the health of that special soil.
Marcela and Joseph are the perfect pair for producing food that balances sustainable farming with exceptional flavour. Joseph has always loved agriculture, and trained in the Netherlands, Sweden, Romania, and Argentina before returning home to run his own dream farm.
Meanwhile, Marcela (originally from Mexico) is a food engineer, who pursued wine studies in France, Spain, and Italy. She has loved to discover the uniqueness of the local soil and climate in the Vendée, and how it affects the flavour of the salads. “Just like with wine, it is the terroir, know-how and passion that mean everything,” says Marcela.
Their passion for nature and expertise in a landscape steeped in heritage are evident in Cour Neuve’s beautiful seasonal crops, their fields filled with different varieties as the months roll by. The farm is thriving with biodiversity – including a striking population of white storks.
