Feta and fennel dip
A tasty, easy dip made with roasted fennel, creamy feta and white beans. Even if you're not sure about fennel, give this a go, it might change your mind. When roasted then mixed with creamy feta and white beans, fennel is sweet, fresh and mild (not aniseed-y, which some people don't like).
Cook's notes
You can cook the fennel in an air fryer if you have one.
Ingredients
- 350g fennel
- 90g feta
- 1/2 tin of cannelleni beans (120g drained)
- 50ml olive oil
- 100ml water
Method

Step 1
Cut the fennel bulb into slices about 5mm thick. Transfer to an air fryer tray (or baking tray if using an oven) and add 1 tbsp oil and mix. Cook for 20 minutes at 190°C, until it starts to brown. You might need a little longer if using an oven.

Once cooked, transfer the fennel to a food processor with the feta and beans.

Add 100ml of water, 50ml of good quality olive oil and the juice of half a lemon. Blitz until smooth.

Taste and adjust seasoning. Serve with crusty bread, pittas or whatever you fancy.
