Grilled Gem Lettuce with Anchovy & Brown Butter
Inspired by our Field kitchen fire cookery demo, this recipe showcases the incredible flavours that emerge when fresh vegetables meet glowing embers, this dish is a true delight. Forget the notion that BBQs are only meant for steaks and sausages; our gem lettuce takes center stage as it caramelises, crisps, and chars to perfection over the open flame.
Ingredients
- 4 large red or green gem lettuce
- 6-8 salted anchovy fillets , coarsely chopped
- 100g butter
- 1 large garlic clove, finely chopped
- zest and juice of one lemon
- generous dash red wine vinegar
- 50ml quality olive oil
- small handful parsley, finely chopped
Method

Step 1
Cut your gems in half lengthways making sure to leave the root intact (this will help hold it together when you grill it). Over a medium grill, place you gems and grill until a deep golden brown colour and just beginning to soften. Remove from the heat and place somewhere warm.

Step 2
To make the brown butter, simply place the butter in a small pan on a very low heat, cook for around 6 minutes, stirring semi regularly until the butter starts to catch and caramelises on the bottom of the pan making it taste sweet and nutty.

Step 3
Once the butter has cooled slightly, but is still warm and liquid, add it to a mixing bowl along with all of the other ingredients and toss together until the dressing penetrates the layers of the lettuce. Plate, eat and enjoy immediately.
