Kiwi, Cucumber, Spinach & Mint Smoothie
Kiwis are a perfect balance of sweetness and acidity. Their citrusy, light flavour pairs beautifully with earthy spinach, and cooling cucumber and mint. This is the ultimate zingy, refreshing smoothie. It’ll make 4 glasses. You can replace some of the water with other liquids if you like. A handful of ice will really complement the cucumber and mint. Half water and half apple juice or coconut water both work well, but increase the sweetness.
Cook's notes
The smoothie will keep well in the fridge for a couple of days; just give it a good shake to bring it back together. Depending on the volume of your blender, it may be easier to make it in batches as and when you need.
Ingredients
- 4 kiwis
- 2 bananas
- 2 apples
- 1 cucumber
- small bunch of mint
- 150g spinach
- 1 lemon

Step 1
Carefully peel the skin from the kiwis and roughly chop them. Peel and chop the bananas. Core the apples and roughly chop, skin and all. Slice the cucumber. Pick the mint leaves. Thoroughly wash the spinach.

Place the kiwis, bananas, and apples into your blender, with 600ml of water. Throw in the spinach, cucumber, and half of the mint leaves. Add a cautious squeeze of lemon and blitz until completely smooth. The smoothness may depend on the oomph of your blender. If you think yours may struggle, you could peel the skins off the apples, or pass the smoothie through a sieve before serving.

Check the consistency and add a dash more water if it seems too thick. Taste and add more lemon and mint to your liking.
