kofta meatballs
A brilliant, subtly seasoned recipe perfect for a summer barbecue.
Ingredients
- 500g minced lamb
- 3 tbsp fresh coriander, chopped
- 1 tbsp ground cumin
- 1 tbsp dried mint
- 1 onion, finely diced
- 1 small red chilli, very finely diced
- 4 tbsp sunflower seeds, lightly toasted and pulsed in a food processor
- 4 tbsp couscous
- 1 tsp sumac (optional)
- salt and pepper

Step 1
Simply combine all the ingredients in a food processor or with your hands, and cook a little nugget up to make sure you are happy with the seasoning. Form into balls and cook on the BBQ. The more you mix, the more solid the texture will be, so don't get carried away.
