Rebel Recipes - Mixed veg curry with chickpeas & veggie basmati rice

A recipe by Niki Webster, aka Rebel Recipes. We sent her a large veg and fruit box and asked her to make us some veg-centric recipes to bring some colour to your plate.

“For me, a curry or soup is one of the best ways of packing as many vegetables into one delicious meal as possible. Combined with some chickpeas or lentils, it makes the perfect one pot meal. Ingredients

For the curry:

  • 2 onions, finely sliced
  • 2 red peppers, finely sliced
  • 2 carrots, chopped
  • garlic/ginger paste; 3 cloves garlic, pinch salt , 1 thumb-size piece of ginger, peeled,3 tbsp oil)
  • 4 tomatoes, chopped
  • 1 tsp garam masala
  • 1 tsp turmeric
  • 1 tsp coriander
  • 1 tsp cumin
  • 1 tsp chilli flakes
  • 1 large 700g jar of chickpeas, drained – we use Bold Bean Co
  • 1 head broccoli, broken up into florets
  • 750ml water

For the veggie rice

  • 2 onions, cut into strips
  • 1 bulb fennel thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp cumin seeds
  • 3 grated carrots
  • 600g cooked basmati rice
  • 2 tbsp garam masala

Method

Prep time: 15 min
Cooking time: 30 min

To make the curry

  • Step 1

    In a large pot, cook the onions, peppers, and carrots with the oil for approx. 8-9 minutes until soft.

  • Step 2

    Now make the garlic/ginger paste by blitzing the ingredients in a mini chopper or by hand. Add it to the veg and cook for 30 seconds, then add the chopped tomatoes and cook down for 4-5 minutes.

  • Step 3

    Add the spices along with chickpeas, broccoli, and water. Cover, and simmer for 10-15 minutes. Taste and tweak the seasoning to your liking with salt.

To make the rice:

  • Step 1

    Add the oil, onions, and fennel to a large pan and fry for 8-10 minutes on a low to medium heat until soft and caramelising.

  • Step 2

    Now add the cumin seeds and cook for 30 seconds.

  • Step 3

    The cooked rice and carrots can now be added. Stir and cook for 5 minutes more. Season well and stir in the garam masala.
