Autumnal mulled apple juice (or cider!)
Autumn is the time for apple harvesting and juicing. Here is a comforting tipple for a chilly night or a gathering around the bonfire. Use apple juice or cider depending on the crowd. If the cider is very dry, a little brown sugar can be used to sweeten, and a shot or two of brandy makes it even more “fortifying”
Ingredients
- 1 litre of apple juice (or cider)
- 20g ginger
- 1 orange
- 1 bay leaf
- 1 small cinnamon stick
- 1 start anise
- 5 cardamon pods, split open
- 5 cloves

Step 1
Thinly slice the ginger. Pull 4 long strips of zest from the orange with a veg peeler.

Pop the ginger and orange zest into a saucepan along with the apple juice and the rest of the spices. Bring to a gentle simmer and keep warm for at least 20 minutes to allow the flavours to infuse. Serve warm.
