This Japanese variety of sweet potato is a real delight in the kitchen. Their flavour is sweeter and more complex than ordinary sweet potatoes, with a distinct chestnutty note. They have a firmer texture – and as an added bonus, they look beautiful on the plate, with purple skin and creamy white flesh that turns golden as they cook.

How to prepare
Use in place of your normal sweet potatoes. They cook a little faster than a conventional spud, and carry strong Caribbean, Indian and Asian flavours well. Murasaki sweet potatoes look almost purpose-made for cutting into long tapered wedges for roasting, or can be baked whole. Peeled, chopped and boiled or steamed, they can be mashed or added to soups and stews. It’s not all about savoury – their inherent sweetness means that they can be folded into any number of cakes, biscuits and muffins, much as you would carrots or squash.
Storage
Delivered from our farm, so wash before cooking. Store on a cool vegetable rack.
