Spiced Indian-style mashed potato is a different side to serve with this mushroom curry, which is quick to cook and light in calories, too. The mild, korma-like coconut sauce is aromatic, but not at all hot; the heat is in the mash, with chilli to add to your own taste. Comfort food at its best!
