Shiitake & Calabrese Kimchi Rice with Broccoli Stalk, Almond & Lime Salad
A note from our cook
Calabrese broccoli is the star in this recipe. It's all used, so there's no food waste, which we love. The florets are used in a speedy stir-fry element, packed with umami goodness from Shiitake mushrooms. Broccoli stalk is super sweet and crunchy, here made into a raw salad. Make sure to slice the stalk very thinly. No oven is needed for this one – perfect for those on a fuel economy drive.
