Quince Brandy
The quince season is perfectly placed for this to be just ready in time for Christmas, where its spice and fragrance feel like a perfect fit. It will store for longer and the flavour will increase with time. Drink on its own or as part of a cocktail.
Ingredients
- 1 large quince
- 1 clementine
- 700ml brandy, calvados, cognac or marc
- 1 cinnamon stick
- 1 bay leaf
- 1 start anise
- 4 cloves
- 8 whole black peppercorns

Step 1
Coarsely grate the quince a put it into a 1 litre clip-top storage jar. Add the clementine, brandy and spices.

Leave in a cool dark place for at least 6 weeks, but up to 6 months, before straining through a fine sieve or muslin cloth and bottling. Once bottled, it will keep for years.
