Pickled radicchio, figs, blue cheese & honey
A combination of flavours from all corners of the spectrum – sweet, sharp, salty, and bitter. A great snack or canapé if served on small crisp breads. For something less refined pile it all onto hot toast. The mix will also work as a salad, tumbled with some mixed leaves, or even folded into hot pasta with a good glug of olive oil.

Ingredients
- 100g of pickled radicchio (See Cook's Notes)
- 3 ripe figs
- 100g blue cheese
- runny honey
- crisp breads, toast, salad leaves or pasta to serve
Method

Step 1
Roughly shred the picked radicchio. Cut the figs into quarters, crumble the blue cheese.

Try serving as snacks or canapés by serving on small crisp breads – it’ll be enough for 12.

For something less refined it’ll serve 2 people piled onto hot toast, tumbled with some mixed leaves as a salad, or even folded into hot pasta with a good glug of olive oil.

Drizzle the honey over at the very end just before serving.
