Rebellion tomato pesto caprese salad
The combination of sweet, acidic tomatoes, creamy mozzarella and fresh basil is nothing new, but striking Rebellion tomatoes add a new dimension to this dish: when sliced, they look like flowers. Using pesto means you can make this salad even when fresh basil isn’t in season, plus it adds welcome flavour and texture additions from the nuts.
Ingredients
- 2-3 Rebellion tomatoes
- I small red onion
- 2 mozzarella balls
- 2 tbsp green pesto
- A good glug of top quality olive oil
- 1 tbsp capers
- Small handful pitted black olives

Method

Step 1
Slice the tomatoes horizontally into 1cm rounds. Peel and finely slice the red onion. Tear the mozzarella into small chunks, or cut into slices.

Step 2
On a large serving plate, arrange the tomatoes and mozzarella in a rustic manner and spoon over drops of pesto. Alternatively, mix the tomatoes and pesto together in a mixing bowl first. Season with salt and pepper to taste, drizzle with olive oil and scatter over the capers and olives.
