Roast courgette, pepper and hummus sandwich
Roasted veg makes such a tasty vegan sandwich filling. Paired with smoked hummus, or any hummus, and a few leaves too if you like. If you have an air fryer, it’s the quickest and most efficient way to roast the veg. Another option is to roast the veg in advance when you’re using the oven for another recipe.
Ingredients
- 1 red romano pepper
- 1 courgette
- 100g hummus, we like to use smoked hummus if we can
- 2 slices of bread
Method

Step 1
Slice the pepper in half lengthways and cut away the stalk and seeds. Cut the courgette lengthways into 4-5mm slices. Transfer to a roasting tray, drizzle in a little olive oil, season with salt and pepper and roast at around 200ºC until softened and starting to colour, around 20 minutes.

Slater the bread with hummus and layer the roast vegetable slices between them.
