First she makes a rosemary salt (so good on roasted potatoes!) then a sage butter (amazing with roasted squash, swirled through soup, or even spread on toast), but you can apply the process to any herbs.

How to prepare
Strip and finely chop the leaves before using. Rosemary loves strident flavours - perfect for fatty roasted meats and dark spiced red cabbage. It also pairs well with most root veg, but has a special affinity for slow-cooked onions and buttery, peppery swede. It doesn't dry well, so if you've got any left over, give it a rough bash and add it to some olive oil to capture its flavour.
Storage
Keep in its bag in the fridge to lock in moisture for maximum freshness.
