Sea purslane, potatoes & peas
As tasty as it is alliterative. Season with salt cautiously, as most of the work is done by the briny flavour of the purslane.
Ingredients
- 500g new potatoes, halved or quartered
- 80g podded garden peas
- handful sea purslane leaves, roughly chopped
- olive oil or butter
- lemon

Step 1
Boil your potatoes in lightly seasoned water.

When cooked, add the peas for 2 minutes to lightly cook.

Drain and then toss together with the purslane, a few turns of pepper, and a little olive oil or butter. Serve with lemon wedges.
