Spiced apple and raisin compote
This is a great recipe to make when you have a glut of apples or apples that are past their best. Use any variety or a mixture; the spiced sauce will make them tasty regardless of the type or condition. The raisins are optional and you can swap them for any other dried fruit, and even cranberries for a festive flavour. It is a very versatile recipe that can be enjoyed with porridge, pancakes, French toast, yogurt or desserts.
Ingredients
- 700g diced apples (4-5 apples)
- 50g raisins (optional)
- 20g brown sugar or caster sugar
- 2 tsp all spice or ground cinnamon
Method

Step 1
Peel, core and dice the apples.

Step 2
Combine all the ingredients in a saucepan over a medium heat.

Bring the mixture to the boil, stir and reduce heat to low. Cover and let it cook for 12-15 minutes, stirring regularly, until the apples and raisins are softened and the liquid has almost all cooked off.

Step 4
Remove from the heat and enjoy straight away or keep in the fridge up to 5 days.
