Spiralised pear and courgette salad with avocado dressing
Courgette noodles (courgetti) are a light, veg-based alternative to pasta. In this recipe we combine them with pear noodles, adding a lovely crunchy sweet bite to the mix. Make sure the pears aren’t overripe or they will turn to mush when spiralizing. If you don’t have a spiraliser, use a vegetable peeler to make long ribbons and cut them lengthways into strands (or leave as wide ribbons) - you won’t achieve the same volume but it will be equally delicious.

This avocado dressing is seriously tasty – don’t limit it to this salad alone.
Ingredients
For the salad:
- 2 pears (ripe but firm)
- 2 courgettes
- 30g walnuts, chopped, plus more to garnish
For the dressing:
- 1 ripe avocado
- 2 tbsp olive oil
- 4 tbsp water
- juice of 1 lemon
- 10g basil, leaves stripped from stalk
- salt & pepper
Method

Step 1
Start by making the dressing. Scoop out the flesh of the avocado into a blender or food processor. Add the rest of the dressing ingredients and blitz until smooth. Taste and adjust seasoning and consistency, adding more water if necessary.

Spiralize the pears and courgettes using a larger blade. Chop the noodles a couple of times so they are more manageable to eat.

Place the noodles in a mixing bowl and pour in the dressing and walnuts and toss to mix.

Transfer onto a serving plate and garnish with a few more walnuts.
