Strawberry vinaigrette
A summery dressing and an ideal use of the slightly squishy strawberry that might have been lurking at the bottom of the punnet. Both balsamic and black pepper can be used as a garnish for a bowl of strawberries, so there is nothing jarring about them meeting in a dressing instead.

This dressing won’t work with everything - it is best with light, fresh summer salads – an ideal way to refine this recipe strawberry salad
Ingredients
- 2-3 strawberries, depending on size
- 2 tbsp balsamic vinegar
- 6 tbsp olive oil
- salt & pepper to taste
Method

Step 1
Pop the strawberries and vinegar in a small blender and whizz together. Alternatively, bash them together in a pestle and mortar.

Add the oil bit by bit and mix until well emulsified.

Taste and tweak with a little salt and pepper to taste.
