Sweetcorn egg mayo sandwich
Elevate a classic sandwich filling with sweet, juicy corn. It pairs really well with creamy egg mayonnaise. You can cook the sweetcorn however you like, but we’ve included a really quick method using a microwave; the kernels steam perfectly inside the husk. If you don’t have a microwave, you can steam, boil or oven cook/air fry it.
Ingredients
- 1 sweetcorn in its husk
- 4 boiled eggs, cooked to your liking i.e. hard or soft boiled, & peeled
- mayonnaise
- bread of choice
Method

Step 1
Cook the sweetcorn, in its husk, in the microwave on full power for 3 minutes. Using a sharp knife, cut the bottom off the corn; it can be a little tough to get through the cob. Remove the husk

Step 2
Sit the sweetcorn upright on a chopping board, holding it steady and use a knife to cut down the cob and remove the kernels. Rotate and repeat until all the corn is off.

Step 3
Roughly chop the eggs and add them to a bowl. Add the sweetcorn and a generous dollop of mayonnaise. Season with salt and pepper. Mix well. Taste and add more mayonnaise/salt and pepper to suit your liking.

Serve inside your bread of choice.
