Lebanese Spinach & Chickpeas with Maftoul

A note from our cook

Maftoul (meaning ‘hand-rolled’) is a large couscous-style grain with a nutty taste. It makes a great foil for this Middle Eastern-style spinach dish, packed with aromatic spices and fresh herbs, and drizzled with cool tahini yoghurt. The flavour is so good, and the whole dish is so easy to make; ideal for a day when you don't want to faff about in the kitchen too much.
