Wild garlic mayo
This wild garlic mayo is so tasty and easy to make, especially as it uses shop-bought mayonnaise.
If you don't have a pestle and mortar, you can finely chop the leaves and mix them with mayo, you might just want to let it sit for a bit for the leaves to breakdown and properly impart the flavour into the sauce.
Ingredients
- 12-14 wild garlic leaves
- sea salt
- 100g mayonnaise
Method

Step 1
Wash the wild garlic in cold water. Roughly chop it.

Step 2
Transfer the wild garlic to the pestle and mortar add a generous pinch of sea salt. Mix until the wild garlic has broken down and the liquid from the leaves starts to release.

Transfer to a bowl and mix with the mayonnaise.
