A note from our cook
This is a dish we adapt in The Riverford Field Kitchen all year round, using all sorts of veg and herbs throughout the year. In this recipe box, we’re using our succulent organic chicken thighs, roasted and full of flavour. Alongside you have courgettes, cooked in two ways, both keeping the their vibrancy and flavour. Mint adds freshness, and rippling through crème fraîche at the end brings it together with a little touch of indulgence.
